I made the most delicious cookies ever last week, so really have to share with you! I tend to bake on the spur of the moment, which in turn means I look for recipes that suit the ingredients I have in the cupboard.
Dark & White Chocolate Chip, Pistachio and Sea Salt Cookies
I found this Millie’s Cookies style recipe on the community recipe database on BBC Good Food’s website and it seemed to fit. I added 100 grams of white chocolate chips, about 100 grams of dark chocolate chunks and a handful of pistachios. Oh, and an extra sprinkle of sea salt too. The better the ingredients, the better it will taste so don’t hold back on the quality chocolate.

I made them in my standing mixer and cooked them for about 10 minutes, anything under and I think they’d be too undercooked for my liking. I had some dough left over so wrapped in cling film in a sausage shape and froze the mixture. After letting soften for 10 minutes I sliced with a sharp knife and I think the resulting ‘cooked from frozen’ cookies may have been better than the original batch!

They were the perfect soft, chewy but crisp on the outside texture, full of sweet, bitter creamy chocolate and salty, crunchy pistachios. A fabulously delicious cookie! Make them this weekend – you wont regret it!!
